It is likely that the first whiskey was distilled in Ireland, based on evidence from Irish monks in monasteries during the 12th century. The Gaelic word for "water of life" is uisge baugh, pronounced "ish'ka'ba'ha". Uisge was modified to "usky", until it became known as "whisky", though Irish Whiskey is always spelled with an "e".

Irish Whiskey, particularly malts, are occasionally distilled in copper pot stills, but most of the blended Irish Whiskeys are produced in a continuous still, also called a Coffey Still after the inventor, an Irishman by the name of Aeneas Coffey.

Kilbeggan, Gaelic for "little church", first appeared as a brand over 100 years ago and was sold successfully worldwide until the 1950's. Cooley Distillery relaunched the label in 1994 as a smooth and balanced blended whiskey, and it has since been well established in America and Europe, winning numerous medals in two major international competitions.
